I'm sorry to hear about Mark's passing.
I was searching his name on the internet and found this tribute page.
I was Mark's apprentice at the Casablanca Restaurant in the West End from 1982-1984.
He was thoughtful enough (and smart enough) to hire me and give me me a chance.
I think he saw a little bit of himself in me.
He was only five years older so we had a lot of fun at the Casablanca.
Tons of teatowel fights and he was really good at it. It's a wonder someone didn't lose an eye... Or a finger.
He came down to Melbourne one time years later when he opened the steak restaurant with Michael Shafferman and we connected again.
I have noted in this obituary that he finally got his dream to go into cars and racing and I was very pleased to hear that.
Being a Chef is a tough life and best suited for younger folk.
Might I please enquire how Mark passed away?
I have enclosed a photo of dubious quality as it's from the 1980s and is the only one I have.
It is I believe from my last night at the Casablanca although I seem to remember I returned for a couple of cameos when Mark or Paul had something on.
I hope this reaches Jude his partner whom I still remember.
